From her email: "Was invited to a friends Dia de Reyes dinner last night. They cooked the whole cow head. Chop up everything and you eat it on
small corn tortillas with pico de gallo y salsa."

2. Cowshead
One of those ingredients you just never quite know what to do with. :P

3. Lol!
It looks so good all browned like they prepared it. I suppose that it would be what Tony Bourdain would call "nasty bits". But I'd like to try it. I'm on a Mexican food kick lately. I even wrapped some of my caramelized onions in a corn tortilla late last night for an "onion carnita".

6. I'm just jealous, eleny.
I remember my family used to celebrate the 6th but that was decades ago.

And I LIKE the nasty bits. :hi:

7. I need to try this to add to my nasty bits list...
brains
kidney stew
pigs feet boiled and jellied
smoked hocks
beef & pork tongue
aspics made from pork tails and feet
chitterlings

But I do admit to being taken aback the first time I saw a shrink wrapped hog's head in the meat case of our King Soopers. =:-0 I wasn't prepared for the sight of it just sort of sitting there minding its own business.

8. I can't cook anything that looks like it used to have a personality.
But I do use cracked hocks all the time in pea and lentil soup.

10. That was our entertainment when, as small children,
we were drug to the grocery store, which was all the time. It was like some gory freak show in the meat case. LOL

11. I have to avert my eyes when walking past the Asian markets
that have dead critters in their windows in SF, heads and all. They look like lynchings to me and on the market street near my condo, they're every five feet!
