I thought I had found this recipe on the internet last week, but it was missing a few items and when I made it last week, it didn't come out right. That was the cake I cut up and added to my chicken and stuffing casserole.
This is actually the correct recipe that has been tweaked by a friend of mine with regard to the spices. I also added chunks of fresh green apple with the skin still on.
This, however, is every bit as good as the Fanny Farmer Fresh Banana Cake we all tried last year. Both cakes are too fabulous for frosting, wonderful just as they are. I just sprinkled the top of this one with a little turbinado sugar.
Applesauce Spice Cake
Ingredients: 1/4 lb. butter 1 cup brown sugar 1 cup applesauce 2 eggs 2 cups flour 1 ½ teaspoons baking soda ½ teaspoon salt
2 teaspoons cinnamon
1 teaspoon cloves
½ teaspoon nutmeg
1 teaspoon ginger
½ teaspoon cayenne
optional: ½ cup golden raisins ½ cup chopped nuts of choice
Directions:
Preheat oven to 350 degrees F. Butter and lightly flour one 9x13-inch cake pan. Cream the butter, add the sugar gradually, and beat well. Add the applesauce and blend. Beat in the eggs and mix thoroughly. Mix together the flour, baking soda, salt, and spices, add to the first mixture, and beat just until mixed. Stir in the raisins and nuts. Spread in the pan, sprinkle the top with a little cinnamon sugar, and bake 35-40 minutes, or until done. Test to see if a toothpick comes out clean.
