I looked for and found this simple brownie recipe last night to make with my nieces.
We were looking for a snack we could make without going to the store. Easy, yummy and still classy enough to be in Williams-Sonoma.

BROWNIES

* 1/2 c butter
* 3 oz. unsweetened baking chocolate, chopped
* 1 c sugar
* pinch of salt
* 2 large eggs, at room temperature*
* 1 teaspoon vanilla extract
* 3/4 c flour
* 3/4 c chocolate, peanut butter, or white chocolate chips (optional) (We used smashed cashews and cranberries.)

Preheat the oven to 350 F (180 C). Lightly grease an 8-inch square baking dish, preferably glass.

In a saucepan over low heat, combine the butter and chopped chocolate. Heat, stirring often, until melted, about 4 minutes. Remove from the heat and stir in the sugar and salt. Add the eggs and vanilla and stir until blended. Sprinkle the flour over the mixture and stir until just blended. Stir in the chips, if using (and I recommend using them! My favorite is Ghiradelli dark chocolate chips).

Pour the batter into the dish and spread evenly. Bake until a toothpick comes out almost completely clean, about 30 minutes (don’t overbake). Transfer to a wire rack to cool completely.

*If you forget to take two eggs out of the fridge ahead of time, simply set them in a bowl and pour very warm (but not hot) water over them. Let them sit in the water bath for a few minutes while you mix everything else, then when you’re ready for them, they should be almost at room temperature.

1. I made brownies last night, but I used TJ's truffle brownie mix out of the box!
Had leftover creme fraiche that was just begging for brownies.

2. We didn't have a box. lol
And the mud is so deep here from the last storm, I had to make a game out of what we could make without wading out there -- so we didn't have to wipe off four pairs of boots and eight paws.

It's too bad it didn't come up margaritas. Why does that NEVER happen? :P

3. Good call. I like rummaging through the cabinets seeing what kind of treats I can
make late at night.

The mud over here on Catalina is also thick and deep. Fortunately, I had what I needed for both brownies and nightcaps!

4. That's my stovetop recipe
only it uses 4 squares of chocolate (4 oz). The sugar cools the mixture down enough it doesn't matter how cold the eggs are. Besides, room temperature in my kitchen is generally 55 degrees.

It's my favorite recipe, a perfect balance between cake and fudge. Best part: only one saucepan, one whisk, and one brownie pan to clean up.

5. It's really good! I usually never eat what I bake but this batch smelled so good
I shared one with my bro. And you're right, the clean up is nada. :)
