Tonight was Rosie's 78th so I made her some enchiladas.
Chicken with spinach and feta filling. I had some cooked chicken so just sauteed it with a little onion, cumin, thyme, Mex oregano, basil, bit of salt, some lime zest and threw in some minced cilantro, chopped fresh spinach and last, the feta.

The enchilada sauce was pretty standard but I didn't put it through the blender this time. (Sometimes, I run with scissors, too, lol). So there were little pieces of pepper and garlic and onion and it was a nice change. I thickened it with cornmeal instead of flour, too, because we don't eat *enough* corn. Side was lentils and rice -- (like dirty rice only using lentils and roma tomatoes for variety), and a green salad.

We probably should have gone out but it was so pretty here today, no rain and two days of sunshine in a row, we just didn't feel it. The wildflowers are sprouting all over the place, lupine and poppies and these little lavender deals that I can't ID. And the hills, which are brown most of the year, are really green right now. This is the beginning of the nicest season here.

Here in northern MN, snow is still everywhere and I'd love to see some spring!

3. Sounds like you have a wonderful dinner
and are taking very special care of Rosie. I'd love to see pics of those hillsides, too. Still terribly brown out here in the middle. Sigh.

But the temps have been wonderful and this morning we awoke to the sounds of wild turkeys calling from that very creek. Very cool, indeed. We keep our acreage pretty wild for the most part so the critters will have a haven, too.

4. Wild turkeys are the funniest looking critters I've ever seen.
We have some that range around here and they show up every week or so. And suddenly, everybody around us has goats. My dog thinks they're other dogs and she's desperate to play with them. She loves their perfume and gets a look of utter love and longing every time she sees them. She's learned the word, "goats". :rofl:

This place is going to be developed but for now, there's all kinds of guys running around. There used to be hundreds of ground squirrels but they all seem to be gone and I don't know what that means. There are more horses grazing here. Maybe they just didn't want to be squished? It's odd, though.

We have 8 acres and few other houses around. Horses, cows, chickens up and down the road. We're one of the few that are leaving most of ours wild for the critters(all but maybe, maybe 2 acres close around the house that gets mowed and that's all...no lawn for us. LOL) so I expect we'll be seeing more refugees to our place as more of their habitat is taken over by houses in the area. More empty fields for several miles around have realtor signs posted. At least they are breaking them up into really large lots. :eyes:
