4. Here in the southwest we can get Mexican crema
which is so close as to be indistinguishable. It's really great stuff.

7. It's showing up around here in some grocery stores
It is relatively expensive. I had never even thought about making it myself. Thanks for the tip. I'm going to try that.

3. perfect to take upstairs...

and give it to the misses, {giggle}

that was fun!

I'll try it - though scrambed eggs is like tomato sauce -
you make what you like, and you like what you make
or you go out....

5. What a true statement about the eggs. To me, those eggs looked pasty and unappetizing.
I prefer my scrambled eggs mixed with milk or cream and cooked in large, fluffy curds. I will, however, try his tip on not salting the eggs before cooking as I sometimes have a problem with "weepy" scrambled eggs.

8. I agree with you completely
I make perfect scrambled eggs and those aren't it. Blech.

Whip the egg, cook in a hot pan brushed with oil, stir gently just a few times. Pour a tablespoon of milk on some empty pan space just before it's finished to keep them from getting too hard. Perfect. Off to make breakfast, lol.

6. I've been cooking my eggs low and slow, and have kept them moving
I'll have to try changing up my technique to see if I like this, if not, it's back to tried and true TommyO eggs.
