Has anyone heard of chess pie? |

I'm making one right now to try out to give to a friend who was reminiscing about it. I just don't know how to keep it once it's done. I making the assumption that since it's a custard type pie that it should be refrigerated once it has cooled from the oven. Is that correct?

They hold up better when kept cool and I think they taste better. I think that storing it like you would a pumpkin pie which is also egg custard based would be best. Keeping it out on the counter won't kill you but why tempt fate?

Of course the best thing of all to do would be to eat it all up when it has cooled to room temperature. Definitely.
