I like catfish a lot but not what they try to pass off around here as "fresh" farm raised catfish. I don't know if the stuff being sold in the restaurants and stores has been frozen or sat around on ice for a few days? But it isn't worth eating.
Only place I ever tasted truly fresh farm raised catfish was when I used to catch them in a pay-to-fish pond about 30 years ago and there was nothing better. That place closed. I have checked with all the fish shops around here about buying catfish still in the hoof(fin?), so to say but no dice.
So I called another small pay-to-fish pond not far from me and they say a lot of people do what I am looking for. They said they dump 10.000 pounds of catfish into their two ponds between 4:00 and 6:00PM every Friday and to come on over with a cooler full of water and they will sell me all I need. And on top of that the neighbor lady next door disclosed that she is an expert catfish cleaner and volunteered to take care of that for me. What a relief that was.
Catfish, hush puppies and coleslaw, and sweet corn. Doesn't get any better.
