If I combined canned salmon with some liquid smoke and cream cheese
is there any chance that it would pass as a reasonable spread for bagels?

1. Try mixing a very small
sample portion and taste it. But I'm thinking it won't pass muster.

9. I agree
mostly because liquid smoke is such an overpowering condiment. I used it years ago with thin sliced tempeh to make a bacon substitute and it was a real bear to get right, like one drop in a half cup of water to marinate the tempeh.

You'd be better off mixing something that goes with poached salmon into the cream cheese, like shallot and dill and a little lemon.

2. First time disagree w hw! Good bagel? Fine! And 'smoke' not necessary, imo!

4. I'm just thinking that because it is canned and cooked
rather than smoke preserved it's not going to have that fresh taste I think of in this combo, and would likely disappoint. If it were smoked, non-canned salmon I would be all over it.

6. That would help some, probably.
Ironically, I am using canned salmon to make sandwiches for Bill's lunch this week as a tuna replacement, which he doesn't care much for and doesn't really trust. It's a nice flavor change but not decidedly noticeable enough to work in a bagel and cream cheese combo. With the sandwich spread/salad there are more ingredients to cover up the disappointment of the steamed in the can method of preserving it. That's why I only use canned salmon for this and for salmon patties.

3. I think you can mix just about anything with cream cheese for a good bagel schmear.
Canned salmon and liquid smoke sound just fine to me.

:hi:
