Rye bread with seeds
Had a hankering for some rye bread with caraway seeds, so I went for it!

This is the basic go-to recipe I've been going with lately, just subbed in one cup of rye flour

3 level cups AP flour
1 level cup rye flour
2 tsp salt
1 tsp instant yeast
1.5 cups water
1 tb caraway seeds (would have used more, was all I had)

mix ingredients, knead for 5 minutes, let rise in covered bowl for 8 hours

gently turn dough out on board

form loaf, I went with a boule, where you sort of pull the dough into a purse, then turn it over so the gathering point is on the bottom

proof 45 minutes on greased baking sheet

bake at 400 degrees for 45 minutes or until internal temp ~200 degrees

That's it! makes very nice toast! (but def. could have used another tsp caraway)

4. I love a good Jewish rye with caraway seeds.
The best way to eat a runny egg is on top of toasted and buttered caraway rye. :9

btw made some bagels using this recipe

came out pretty well! I like the short rise and quick bake aspect. Plus you can make a bunch, split 'em and freeze them for later! The onion ones I attempted burned though (just the onion flakes burned) - i wonder if soaking the dried onion flakes might work

after trying the recipe a couple of times, made some changes: I made them bigger - divided the recipe into six instead of eight, also baked at 400 instead of 425, and didn't flip them
