bakery soft cookies
I know there's a way to make soft chocolate chip cookies besides underbaking. Substituting some flour for baking powder?? It's been soooooo long since I baked cookies. :hi:

1. I keep mine soft and chewy
by keeping them in an air tight container, with a piece of bread under a paper towel in the bottom of it.

I've made some pretty good cookies without having to try to make them soft, just keeping them that way.

2. Check out this recipe
it recommends using shortening rather than butter, at least half brown sugar instead of all white sugar, and adding extra flour. Egg yolk is another thing I've seen mentioned as an ingredient that helps make soft rather than crisp cookies.

6. I was watching America's Test Kitchen this weekend and they added
an extra egg yolk to a chewy cookie dough. The yolk alone adds fat which helps keep the cookie moist and chewy. Since the egg white is mostly water, it tends to make the cookie crisper.

7. Sprinkle some water over the dry ingredients
and mix in.

Not much - just a few drops.

Then add your wet and don't mix too much.

Butter is usually best :)
