Turkey on sale for $.39/lb.

16.3 lb turkey minus the 1 lb gravy packet—who among us can’t make gravy?

15.3 pound turkey yielded the following:
3.5 lbs ground turkey – two varieties of sausage; garlic sage and maple
10 breast cutlets @ 3-6 oz each – bacon wrapped!
1.25 lbs pate’ from giblets and meat from the stock bones
23 cups stock
Still have 1.6 lbs of wings that I’ll smoke for seasoning soups/stews
I estimate 1.25 – 1.5 lbs loss due to cookdown of stock meat and un-recoverable scraps.

Looks like a 62% return of edible food! Actual cost of food was $.69/lb.

Not bad, huh?

1. People don't realize what you can do with a whole turkey
when you approach it with butcher and boning knives. I have long substituted turkey meat for both pork and veal in recipes. I also do a kickass green posole using ground dark meat turkey.

One of my perks at my last job was a turkey once a year. Since I have a POS side by side fridge that won't hold it, I'd take it home and break it down into cutlets, meat for grinding, and soup stock fixings. None of the bird went to waste, ever. It just never went into the oven in one piece.
