Awesome way to extract moisture from pumpkin pie filling for cheesecakes or other goodies
This technique will extract up to 4 fl oz of water from the pumpkin filling. I saw this being used on ATK. You can view it @ link.

But here's the basics.

Step 1. Place 3 layers of paper towels on a cookie sheet.
Step 2. Next spread the pumpkin filling over the top spreading to the edges of the pan in a thin layer.
Step 3. Once this is done add 3 more paper towels on top of the pumpkin and press the towels over the top. You will notice the liquid being extracted from the filling.
Step 4. Once you have extracted all the water pull the top layer of paper towels off. Don't worry about the pumpkin sticking because it won't.
Step 5. Now fold the pumpkin over on top of itself, or and flip it onto the cookie sheet or into a bowl.

Pretty simple technique and easy to do. Especially when you need the filling with less moisture.
