Coconut Flour -- anyone here use it.
I stopped by Whole Paychecks on my way to work (it's like 1/4 mile away) this morning in search of some rye flour. A bag of Bob's Red Mill Organic (yeah, no sulfites!) Coconut Flour jumped into my basket, and demanded I take it home. So, I did.

What the blazes am I going to do with it?

First thoughts, aside from the obvious baking of some kind of interesting tropical treat (bread, cake, coffeecake) might be that it would perhaps make an interesting coating on shrimp or chicken, assuming it doesn't burn to quickly (bag says it's "sweet" so it probably would burn/over-brown fast).

1. Sauces, soups, milkshakes, curries...
I would probably use it where I would use coconut milk or creme and make up the liquid some other way.

And Tropical Traditions (a coconut oil supplier I had bookmarked) has a ton of recipes - gluten free recipes often use coconut flour:
