Smut !
The 'Dr. OZ' program recently discussed Corn Smut fungus (Ustilago maydis) as a new "super food"

I tried it a few years back, after seeing it for sale for $19.99 a lb at a local gourmet market. It's wonderful stuff -- tastes like mushrooms mixed with sweet corn.

I hope the Dr. Oz link works -- when I tried to see the video, it kept throwing an error. But, my wireless connection is weak, so that may be why. I hope it works on wired broadband.

1. I find it has almost a truffle flavor
but I've used it mostly in tortillas. The trick to using it is to open the can and without looking, dump the contents into the blender and buzz. What you get will be dark and evil looking but not diseased the way the contents of the can look. Then you're ready to use it in the recipes you find out there in internet land. It's usually called either cuitlacoche or huitlacoche.

I've seen Bobby Flay talk about it but I've never tried it. A complete protein too? Cool!
