Saturday morning baking -- Avocado bread.

Saturday morning baking -- Avocado bread.
This is just a basic white bread with the addition of mashed avocado. It turned out very nice. Only a very slight hint of a nutty/oily taste from the avocado, sort of similar to the flavor obtained from making bread with a nice EVOO.



The photo doesn't quite due the color justice, it is a very pretty, very very pale olive greenish color.



The recipe (approximate, I didn't measure)

1 cup water
1/2 cup milk
1/4 cup honey or brown sugar
1/4 cup vegetable oil
Heat all of the above to about 100 to 105 degrees (F).

ADD 1 tablespoon of yeast. Set aside about 10 minutes to proof the yeast.

Then add

2 small avocados, mashed
2 tablespoons lemon juice (to prevent the avocados from browning)
1/2 cup cooked, mashed potato
5 1/2 to 6 cups all purpose or bread flour (I used white flour this time, I wanted to be able to see the delicate green color of the avocados)
1/4 cup wheat gluten IF you use all purpose flour (to increase the gluten)
1 teaspoon sea salt or kosher salt

Mix it all together, and then knead for about five minutes or so, until it feels "right". Use more flour if necessary to prevent dough from sticking.

When kneaded, set aside in a greased bowl in a warm spot, cover the top with plastic wrap to prevent drying. Let rise until doubled.

Punch down, form into 2 loaves, and put them in greased loaf pans or onto a greased baking sheet. Let rise until nearly doubled again.

Bake at 350 for about 30 to 35 minutes, or until crust is browned and a knife or wooden skewer inserted into the center comes out clean. Actual baking time may vary a bit due to the type of pan and the oven.

When done, let them sit for about 5 minutes, then pop them out of the pans and rub the top with a little melted butter if desired to give a softer crust.

The one I sliced is almost gone -- 3 of us plus a few bites for the dog.

It was just a little bit moist in the crumb, so that it kind of mashed a bit as I sliced it. I think either it needed to bake for about 5 more minutes, or maybe cut the oil to about a tablespoon. When I first sliced it, it was really too hot, and I thought that was the problem, but it's still doing it after it cooled. Oh well, doesn't matter because it won't be around long enough to be a problem.

3. Potato AND avocado - YUMMMMM. I love bread with surprise produce in it!
Sauerkraut cake, zucchini bread, carrot cake, etc etc. All wonderful and nutritious!

The avocado is a good touch! I make an olive oil bread that is interesting too. Great flavor.

5. I'll have to bookmark that one.
Every so often, I hit our local Bi-Lo when they have bags of avocados on mark-down. $1.49 for a bag of very ripe avocados, usually 7 or 8 of them. I can't pass it up. I wind up overdosing on avocados. This would be a nice alternative to guacamole and avocado soup.
