Tomorrow is the 14th anniversary of my first date with Bill. We had met in a chat room on-line and had been talking to each other since Dec. 01, 1996. We married on Jul. 05, 1997 and have barely left each others side since. We do nearly everything together except work, and we did that for a while. A couple of weeks ago, I had this dream that I woke up and he was sitting at his computer in the bedroom as always except when I said good morning, he said, "I've been cheating." I told him about this dream when I woke up for reals, and his response: "Yeah, all those times you thought I was on the toilet, I was really seeing someone else." I love his sense of humor. :D
Anyway, this morning breakfast was biscuits and frash aigs. I made an extra large batch of biscuits a couple of weeks ago and froze some of them unbaked.
Around 11a I put pork tenderloin in the crock pot with a bay leaf, a little water, salt, pepper, and ground dried garlic. Then set about cleaning my kitchen and finishing the laundry. I also put on another batch of the light wheat bread from Smitten Kitchen. I added sauerkraut, more pepper and garlic to the crock pot about an hour or so before the pork was done.
Tonight's cookie of the week is Blueberry Oat Bars with blueberries frozen from this past summer:
http://allrecipes.com/Recipe/Blueberry-Oat-Bars/Detail.aspxI subbed in 1/2 cup ww flour and added a heaping handful of sliced almonds to the crust mixture. I meant to use brown sugar instead of granulated as usual but had a brain fart. Oh well.
And I may be late to this party, but I am not going to cut in cold butter by hand ever again. I just mixed all the dry ingredients in my stand mixer, chopped the cold butter into small pieces, threw it in and mixed away.
I was going to make an apple coffee cake with cranberries and we started talking about how good pumpkin cranberry would be, and I said I should have picked up a butternut squash at the grocery yesterday. Then I remembered I had some large sweet potatoes in the bread box...and voila!
http://www.cookingcache.com/sweetpotatocranberrybread.shtml?rdid=rc1I subbed in 1 1/2 cups ww flour. I microed the potatoes, let them cool and roughly mashed them between my fingers, and mixed the eggs and oil into them before adding to the dry ingredients. It still seemed like a pretty dry, stiff batter, so I added 1/2 of greek yogurt.
Finished fixing dinner which at this point merely consisted of mashed potatoes and applesauce. Bill sliced the fresh bread.
Aside from the bread, which is so easy and come out perfect every time, neither of us have tasted anything yet. Still too full from dinner.
The dishes are done, I am pooped out and still have earring orders to prepare for the morning mail.
I hope you all had a very tasty Sunday, too. :hi:
P.S. Thank you to my friends for the hearts. I wish I could award some myself, but with missing so much work due to the blizzard and a huge propane bill, we are gonna have to be sitting a little tight on the funds the next couple of weeks. But you all have my heart for reals. :D
