.99/lb catfish nuggets!

.99/lb catfish nuggets!
Only thing is they're in 15 lb boxes--flash frozen. I repackaged them to 1 lb servings but unless I can come up with a variety of recipes we'll get tired of fried catfish.

Can ya' help me out?

I've got a pretty good baked recipe but it just mimics frying w/o the deep fat fryer. I've thought of Asian style steamed fish balls or a chowder but I don't have a tried-n-true recipe.

1. In New Orleans, we would pull out the crawfish boiling equipment, fill it with oil
and invite everyone we knew over for fried catfish. You can throw some hush puppies in there too.

Then get the guests to bring the sides, cover some outside tables with newspaper and have a great party!

Actually, it's basically just a fish cake. But can be quite good.

3. Hadn't thought of that! I'm thinkin' some cajun spices and maybe
a rice/fish mix like boudan blanc. Lightly smoked? This has some possibilities.

4. There are a lot of very good catfish recipes on Delta Pride's website

Here's one

Southern Catfish Stew

1 pound Delta Pride catfish fillets
3 slices bacon, chopped
1 cup chopped onion
½ cup chopped green pepper
1 large can tomatoes
2 cups peeled and diced potatoes
1 cup water
¼ cup ketchup
2 tablespoons Worcestershire sauce
1 teaspoon salt
½ teaspoon pepper
½ teaspoon thyme

Wash the catfish fillets and cut into 1-inch pieces. Set aside. Fry the bacon for 2 to 3 minutes in a large heavy saucepan. Add the onion and green pepper. Cook until tender. Add the remaining ingredients and bring to a simmer. Cover and cook for 30 minutes. Add the fish and cook for another 20 minutes. Correct the seasonings if necessary and serve hot with a skillet of Mama's Cornbread. It's crusty on the outside and absolutely perfect!

5. I have used catfish in a Fish Florentine adaptation
Usually catfish fillets, but it would work with nuggets.

From memory, but adjust as you like:

1 package frozen chopped spinach, thawed
2 pounds catfish
1 small onion, chopped
1-2 cloves of garlic, minced
1-2 lemons, to taste
cream or milk
salt & pepper to taste
Parmesan cheese
bread crumbs

Preheat oven to
Squeeze as much liquid out of the spinach as possible. Sautee the onion and garlic until translucent, stir in the spinach and cream or milk, and the zest of the lemon. Put fish in lightly oiled baking dish, season with salt & pepper, and cover with spinach mixture. Mix Parmesan and bread crumbs, sprinkle over the top. Bake for 10-15 minutes, until the fish flakes and the top is browned. Serve with lemon wedges.

I did not put measurements for some of the ingredients - I like a lot of lemon zest and juice with my fish and spinach, and a lot of Parmesan on top. Sometimes I mix Parmesan into the sauce. This is also good, but a lot more work, if made with fresh spinach. With fresh, you should sautee it ahead of time, then chopped and press out as much liquid as possible. Often I add some seasoning and herbs, but those vary depending on my mood. Mustard and Italian style herbs are two good additions.
