.99/lb catfish nuggets!
.99/lb catfish nuggets! 15 lbs at a time! Three lbs down, 12 to go.

Catfish Chowder (really good with a flavor much like clam chowder)

2 lb Catfish fillets
2 c Fish stock (see below)
2 c Lt. cream
4 Potatoes, peeled and diced
2 Stalks of celery, diced, with leaves
2 ts Salt
1 Clove minced garlic
2 md Onions, sliced
1/4 c Butter
1/2 ts White pepper

Saute onions and celery in bacon drippings until tender. Add all other ingredients except milk and cook over medium heat until potatoes are done. Add cream, heat on low.

Fish balls (threw a small party and went through 2 pounds in no time)

1 lb catfish nuggets, boiled until they flake
2 medium potatoes, boiled until tender (I use the fish stock from the catfish)
½ onion, chopped fine and sautéed until tender
1 clove garlic chopped fine and sautéed with onion
¼ cup chives, chopped fine
1 egg
Bread crumbs for binder
Cornmeal for frying
Salt & pepper to taste

Put everything in a food processor and pulse, adding bread crumbs to make a paste suitable for forming into 1 inch balls. Roll in corn meal and deep fry to golden brown and delicious. Note: DO NOT discard fish/potato stock! That’s good stuff and the potato starch adds a great mouth feel. Adjust seasoning by rolling small samples and frying before rolling the rest of the recipe.

Serve with a dipping sauce of your choice.

1. Do you like spicy food?
My wife has a very simple, very tasty recipe for catfish. She's Chinese so you KNOW its good ;)

3. Bring on that recipe! Wife never met a spice she didn't like.
Plus I've still got 11 pounds for the two of us. Like the definition of a ham and two people: eternity . . .

or just "poetic remembrance of catfish".

I could eat catfish every day for months and never get tired of it but blackened is a favorite around here. It's so easy, light and good. :)

4. Nuggets are the little pieces of meat left after the front fins are trimmed
off the fillets. They range in size from a max of 2 oz down to itty bitty pieces. Great for deep frying or soups & stews or other things that use little bits. They usually have a residue of dark skin, sort of like silverskin on tenderloins. They tend to curl up around that skin when cooked.
