Cheesecake Frozen Yogurt
Edited on Sun Mar-27-11 05:53 PM by Lucinda
I posted this on another thread but thought I'd OP it in case some of you missed it.

Technically Fat Free Strawberry Cheesecake Frozen Yogurt - but I tweaked the ingredients.

This was AMAZING. ♥
Creamy, yummy, good.

~ I'm avoiding fresh fruit while on the chemo meds, so I omitted the berries. Bill wants to try it with Comstock pie filling as a spoon on topping next time.
~ I used full fat cream cheese and lowfat vanilla yogurt (cant get full fat yogurt where I live)
~ I can't use artificial sweetners, so I used regular sugar (omitted the stevia and subbed equally for the Splenda)
~ Slightly softened the brick of cream cheese (on counter 15 minutes maybe) then mixed it all in a food processor until totally smooth.
~ Then popped it into my ice cream freezer attachment and ran for about 10 minutes.

It was amazingly good.
If you don't like a lemony cheesecake flavor you could reduce or omit the juice. But I think it's perfect.

This freezes beautifully too.
I just had a regular plastic glad ware dish available, so I popped the frozen stuff in it, put the lid on, then sealed the tub in a plastic bag. It stayed creamy and delicious for several days.

Hope you are all well! ♥
Luc

1. Sounds really good, babe.
I'll refer back to this when it's time to drag out the ice cream maker again. Very cold here today, so it's gonna have to wait for now.

How are you feeling, sweetie? Any better today?

2. We're having a cold snap too.
And rain...but it's a good way to get yogurt into my diet. With this chemo med I have added in yogurt to help keep my stomach balanced. I did much better with the drugs this past week. Just a few bad days this round. Hopefully it's a trend. It's pill day again though. :(

Thanks for asking. :) ♥
