Does anyone do Thai here? I have an eggplant question.
I was wanting to fold in some eggplant instead of chicken to a batch of Pad Thai. Anyone have a suggestion for seasoning? I don't know enough about Thai yet to figure it out, just enough to get into trouble. :)

1. Pad Thai can be pretty much be what you want it to be.

I think that Pad Thai always features beaten eggs and bean sprouts, but eggplant could be a substitute for pork or shrimp (or whatever!;) protein you prefer. The recipe I use seasons with, sugar, fish sauce, ketchup & lime juice. For garnish: red pepper flakes, sliced scallions, and chopped cilantro. Good choice of dishes for a hot day. :hi:

2. Follow this recipe. Substitute the eggplant for the protien.
Be sure you peel the eggplant. The skin will overwhelm because it will probably fall off and be in the way.
