BLT pasta salad...
This may be old hat for some of you but it was new for me.

I am always asked to bring pasta salad to summer time get togethers but I'm a little tired of the Italian dressing version. I make one with spinach and roasted peppers that's pretty good but some people just won't eat spinach.

So for father's day this year, I did a little googling and hit upon a BLT pasta salad at food.com

I spent some time reading the reviews and decided to give it a go. I left out the sugar and made a full package of pasta because who makes only 7 ounces of pasta? :)

The first time I made it, I made extra dressing and put the pasta in the fridge overnight as one reviewer suggested. I didn't add any of the other ingredients until the next day. Well, the pasta absorbed too much dressing so I had to add a little more. I don't like a heavy dressing but I felt like it was too dry and didn't look right. I also just added a little romaine at the very end and not the full amount listed in the recipe. Everybody ate it up!

I made another small batch for the 4th and this time I just put it in the fridge for a few hours before serving. That worked out better I think and I didn't have to add any extra dressing. I used the tri-color rotini and I liked the look of it better than the plain.
