What's for dinner?
Bill works outside in the horrible heat, so we are cooking filling foods lately that are also "lighter" side, if that makes sense.

I'll make veggie/fruit juice when he gets in, since we are officially addicted now.:)

We will probably make Jasmine Dirty Rice or King Ranch Enchiladas. If you haven't ever tried Jasmine Rice, I highly recommend it. It's not expensive, and has a great fragrance/taste. We usually sautee whatever veggies are floating around and add chunks of sausage or chicken. I'm moving more and more vegetarian lately, but Bill is a hard core meat eater, and this makes a nice meal for both of us.

King Ranch casserole (cooked chicken, rotel, corn tortillas, sauteed onions and a binder which is often cream of chicken/mushroom soup or - with shredded cheese on top) makes killer enchiladas. You can also add beans etc. They are really good, and reheat perfectly.

Sorry. I'm probably rambling...lol...Anyway...what's for dinner where you are?

We ended up with fresh juice and ordering pizza. We both had online work we wanted to get done tonight. And pizza was on sale! Woot.

2. We've been eating a lot of veggie paella
I use brown short grain rice and brown it in Olive oil with onions and garlic and spices. I've been using smoked paprika but Italian or Greek spices work well too. Then I add shredded zucchini and carrots and veggie stock with a can of chopped tomatoes. I top with some olives and cherry tomatoes and stick it in the oven until the liquid is absorbed and the rice is tender. The veggies pretty much disappear so it's a great way to get rid of all those zucchinis. Sometimes I'll throw in a can of chick peas.

Nowadays it seems potato salad is often quite liquid and mushy. Not in the old days.

...and a big big crunchy greens salad with kirby cucumbers (yayy!) and sun-dried tomatoes and buttermilk ranch. And rhubarb pie.

We made french dip a lot when our slicer still worked. I haven't had it in a long while.

10. A bowl of posole verde that took me three days to assemble
because it's been so damned hot here.

However, it was well worth the work and I'll be eating it the rest of the week. By then, I'll be due for more seafood salad.

11. some easy chili i made the other day

1 lb stew meat chopped into small (peanut) sized pieces
1 pound pinto beans (soaked overnight)
1 cup sofrito
1 tub 'fresh' salsa
1 can beef broth
enough added water to cover beans
Mrs. Dash to taste
chili powder and garlic to taste, salt after beans are soft


brown beef with garlic, Mrs. Dash and chili powder (i don't add salt til the beans are cooked)

add to crock pot with all other ingredients and cook til bean's skin splits when you blow on them

Serve with a dollop of sour cream and sliced green onions as a garnish

if you don't 'grok' sofrito, it's a spanish/cuban/puerto rican/mexican sauce. Sofrita means 'gravy' or 'sauce' in spanish

13. I've been craving chili lately but it's been so hot I haven't mentioned it.
I always seem to want something with some kick when i feel a little cold trying to start.

I'm never tried the sofrito. I'll definitely look for it!

12. mr. beac is out of town for a few more days, so I've been doing a combination of
grazing (cheese, crackers & fruit) and eating things he doesn't like (brussels sprouts) for dinners the past couple of weeks. Oh, and I MAY have at some point eaten an entire box of Annie's organic mac and cheese (with veggie mixed in for "health".) ;)

Last night it was so hot here all I could think of was cucumber sandwiches. Alas, Arnold stopped making its "Melba Thin Rye Bread" a while ago. It was my very favorite of all for cuke sands-- lightly toasted perfection. So, now I use those multi-grain "sandwich thins" that look like flat buns. My local grocery carried a nice organic brand that I just discovered yesterday they are discontinuing. :( I'll have to stock up before they run out completely.

Anyway, cucumbers sliced thin on the mandoline, lightly toasted (must be thin) bread, Durkees sandwich spread (kind of a mustard-mayo for those who aren't familiar), salt and pepper. HEAVEN.

14. Sounds sooo good. I love all sorts of veggie sandwiches with a nice
crispy bread.

It sounds like you have the same luck we do with favorite food items. If we really love something, the store usually manages to stop selling it, or the manufacturer stops making it.

16. I love veggie sandwiches too
Thinly sliced cukes, green bell pepper, and tomatoes on good whole wheat bread, with mayo mixed with dill weed as spread. That is a delicious and refreshing combination. Sometimes I add avocado.

17. Friday night's dinner:
We switched the Jasmine Rice to tonight since we wanted to work last night. So... sauteed peppers and onions with crumbled sausage and Jasmine Rice - Cajun Style. And fresh fruit for desert.

We are economizing & eating lighter since it's so freakin hot out, and we got hit with an uxexpected HOA bill this month!

that means your feeling better these days.??? I'm eating lots of tomato sandwiches, smoked turkey & tomato sandwiches, tomato, basil, olive oil, and cheese sandwiches. It's been too hot to do anything here in Georgia, but I've been working extra days, so I eat lunch in the hospital cafeteria and just have a light supper. Hospital food isn't usually very good, but ours has a nice salad bar, and usually has beans or peas in addition to other vegs. and with a 40% discount, I can eat very cheaply.
