I recently found myself home, alone, with no wife to cook for... :(
Since I had no one to cook for, I did not hit the store to pick anything up and had very little to work with. I ate a can of soup but I was still hungry so I raided the near empty fridge. As far as food went, I had one container of really good Greek yoghurt, about 3/4 of a pound of fresh shiitake mushrooms and condiments. In the garlic keeper I had two cloves left along with a 2 day old loaf of crusty French bread. Not much to work with but here is what I did.
I put the mushrooms and garlic(kept the cloves whole) on a baking sheet, drizzled them with extra virgin olive oil and roasted them on 325 until they just started to crisp up and the garlic turned light brown. Once they were done, I cut the bread on the bias(so the stale crust does not rip the crap out of your mouth), buttered it and placed it in the oven to toast it.
I dropped the mushrooms, garlic and the oil that was drizzled into a food processor. To that I added about a 1/4 cup of the yoghurt and about a tablespoon of more oil and blended it. I salt and peppered it to taste and added more yoghurt until I was happy with the flavor and texture.
By then the toast was done. I then spread the mushroom paste into the bread and had a great snack! If you have ever had a mushroom pâté the taste is quite similar only without the mineral flavors of liver.
