Summer chopped salad
(Recipe somewhat reverse engineered from a restaurant)

1 head romaine lettuce
3-4 roma tomatoes, seeded
3 ears corn, grilled and cut off the cob
2 boneless chicken breasts, seasoned with S&P, grilled
4 strips bacon, cooked well and crumbled
3 corn tortillas, cut up into little strips, fried in the bacon fat until crispy
3 oz blue cheese crumbles
1 avocado, peeled/seeded


Cut everything up into little pieces.

Dressing:
Juice of one orange
Juice of one grapefruit
A squeeze of honey
2 tbsp rice vinegar
2 tbsp olive oil
1/4 cup minced shallots
S&P

Mix all of that together in a blender or shake it or whatever.

Drizzle a little at a time over the salad, toss, repeat until everything's coated.

Serve with grilled garlic toast.

Serves 2-3 or maybe even 4 as an entree, depending on how hungry everyone is.

2. Sounds yummy
One of my favorite summer salads is a bbq chicken salad with several of the same ingredients Romaine, corn, black beans, avocado, tomatoes, tortilla strips, chicken breast with a little KCMasterpiece bbq sauce on it and shredded monterrey jack cheese (optional). I cheat with the dressing and use a Spicy Ranch dressing made by Hidden Valley.

3. Grilled garlic toast?
How do you make it? does it involve aluminum foil, or do I just plunk the bread down on the grill?

We're using charcoal bricks, btw.

5. I've just buttered and grilled french bread, then spread roasted garlic
on it.

You could probably also make garlic bread the traditional way, wrap in foil and let it bake for a bit on the grill.

4. Ok,
My family and I had this for dinner last night and it was great. I especially loved the citrus dressing, yum! Needless to say I'll be having this a lot more often.
