1. Creamed corn is waaaaaaaay better than just canned corn
True story ... Sparkly Jr loves it right from the can ... cold. She got a case of it this past Christmas! :)

8. I love it out of the can too, but even BETTER than plain creamed corn
is the Glory Foods Skillet Corn...OMG, evem hubby commented on it.

3. Nothing beats homemade creamed corn
It's just "THE BEST" - mmmmmm.... some corn, some cream (or half and half), make up a roux with some butter and flour, add some salt and a litte white pepper... yummmmm!

It was always such a treat when my mom would pull some out of the freezer in the middle of winter--what a great comfort food!

4. I use it in corn chowder
but I'm not fond of it out of the can. It's the texture, not the flavor, that I object to.

It is great in chowder, though, and I've used it in cornbreads, also.

like scalloped corn and cheesey cornbread. I'll eat it, but it is not high on my like list as a vegetable/side dish.

But I will mix it in cornbread or use as a basis for chowder.
My favorite creamed corn comes from fresh corn...

...while I like creamed corn occasionally,My favorite (canned) is Green Giant Mexicorn.And what pisses me off is:

A: It only comes in small (11 oz) cans.
B. It cost TWICE what their regular corn does.
C. Similar products (generic, store brand and DelMonte Fiesta corn) have disappeared from shelves here leaving me to wish I could grab the "Jolly Green Giant" by his "Huge Verdant Orbs" (Ho Ho Ho) and squeeze....No one else seems to make this.

16. How about frozen medley products?
We can still get the Fiesta canned corn. But there's also frozen mixes with corn, peppers and onion in them. Hope you can find them in your area. They're very tasty.

21. I haven't found the DelMonte locally in the last 18 months...
...and haven't found a good frozen medley. Local market chains are Market Basket and Shop n' Save....I figured Green Giant sued or pressured them out of the market. Market Basket HAD a very good generic, but now it's gone....

17. In college I worked at a Green Giant
processing facility during corn pack (a couple of years), and what I witnessed there turned me off sweet corn for years, especially creamed corn!

19. I have to admit my knowledge is 20 years out of date,
but some things just stick with you!

This is what I remember: the best quality corn was processed fas rozen cob, then frozen kernel, then canned kernel and last of all was creamed. When the corn went through the sorting process for grading, the corn that was wormy and smutty that ended up creamed style. Some workers deliberately introduced all sorts of foreign material, usually just to get the line to shut down for a break but sometimes it was malicious (dead mice). Plus if the people who were supposed to sort the corn were tired or just lazy let a lot of poor quality corn through (again, wormy & smutty), it would go down to the cutters who were pushed to run as many cobs through as quickly as possible - they didn't have much time to inspect the corn before running it through the cutter. A lot of crap went through that shouldn't have just because someone earlier in the process didn't do their job (for whatever reason). They'd also sweep up the corn that fell on the floor and dump it back into the line.

It was a hard job - you'd work 12 hour shifts (most jobs you had to stand) with a 10 minute break about every 2 hours (just enough to get to the bathroom and back) and a half hour lunch every day unless the machinery broke down - they didn't bother to clean the machinery unless it was broken. That particular practice did change in the three summers I worked there - they had to implement a regular sanitation schedule every so many hours of the plant running).

Granted a lot of what went down was instigated by individual workers, but the way the business was structured, it caused a lot of people to cut corners in order to make quota.
