New vegetarian needs recipes!
After much thought and a few attempts, I have been meatless for almost a month now. I have been having allot of fun experimenting with new recipes and wondered if anyone here has a few "stock favorites" they would be willing to share.

I am really looking for vegetarian sandwiches to pack for lunch during the week...any thoughts?

2. Well...
since I am new, I am not limiting myself too much since I'm trying to ease into it. Because I live in a pretty rural area, it is sometime hard to find vegetarian entrees in restaurants that and I am Italian and our Holy Supper is all fish, I have decided to eat some fish :)

So I am still eating dairy and some fish occasionally at this point. But I am determined to go mostly veggie someday. Also, to note, I am very adventurous when it comes to food. I've eaten my way to Sri Lanka and back. :)

3. Veggie sandwiches
My three favorite sandwiches...

Marinate and broil some portabello mushrooms, slice into half inch slices, and serve on a whole wheat bun with some basil, tomato and mozzarella. you can even heat it and it almost tastes like a pizza.

Boca Burgers, my favorite lunchtime burger...Just garnish it like a meat burger, it's good!

I also marinate and bake tofu and make sandwiches with that.

You just hit my problem dead on!

Marinades????? DOn't get me wrong, I LOVE balsamic vinegar but I have been using so much of it lately and I am getting tired of it.

I had tofu marinated in hot sauce and fried crisp once and that has been my favorite so far. But if you could give me some more ideas what to do with tofu I would forever be grateful.

5. Instead of balsamic vinegar
Tomato juice or V-8 juice with garlic and herbs works great as a portabello marinade.

Or mix lemon or lime juice with your choice of herbs.

Tofu, I do variations on the Asian sauces like fish sauce, peanut butter, black bean sauce, soy sauce, and add seaweed, herbs, powdered ginger, etc. Tofu absorbs the flavor and the overall effect is good.

there is a thread for recipes. Also, if you post a request, you will get some good replies :-).

One of my favorites is :

Hard Roll
Feta Cheese (crumble it)
Kalamata Olives (sliced)
Red Onion Slices
Tomato slices

Pile everything on the hard roll, drizzle with extra virgin olive oil and sprinkle oregano over.

Another one:

Whole Grain bread or sourdough
Monterrey jack cheese slices
Sprouts
Avocado Slices
Mayo

Another: A wrap

Flavored tortilla
Lettuce
Your choice of cheese slices
Thinly sliced tomato
Sprouts
Mustard or mayo
