I'm making fried chicken thighs and pinto beans for supper tonight.
I'll have some sliced homegrown tomatoes too. I trim up the chicken thighs a little(fat) and then fry them with no oil in a big Silverstone pan we have. I boil the pintos in chicken broth and add some Sofrito towards the end. Sometimes making something easy is good enough. Know what I mean ?

You betcha I do!

Cooking for me (and I know for you) is fun, but sometimes .... well ..... it can just feel like a chore.

Nothing wrong with easy!

Had a baby six months ago. I just don't have the same time to commit to dinner as I once did.

Mmm... fried chicken, tomatoes, beans. It was a mistake for me to visit this thread at lunchtime.

3. I'm having pintos and corn bread tonight
nothing else. I put in some onions garlic and chilies, used ham juice from ham and cabbage the other night and put about 1/2 pound of bacon in.
Gonna try making my own refried beans with what ever is left.

4. Beans and cornbread is really good.

5. I'll try that next time - got a recipe?
I used the mix and added creamed corn this time. I need to get baking powder since I got cornmeal now. I'll try some home made. I want to experiment with a variety of cornbread recipes.

6. The one I use is a package mix that has jalapenos in it already
I dice some up and add more anyways. A lot of people don't realize how good jalapenos can be without being too hot. I hold the pepper by the stem on top and filet the sides off of it the long way standing straight up. As long as you don't get the seeds and a lot of the veins, they are really not that hot. I rinse them under cold water too to get rid of some of the oil. I use them in a lot of different dishes. You can dice them very small and they add sort of a wakening up to whatever you put them in without being too hot.
