Question about collards

Can you still eat them after they've begun flowering?
I just went and picked off some flowers and ate them, and at first they tasted like raw broccoli but now they are BURNING MY MOUTH! :grr:

you let their flowers blossom they will be quite attractive and willowy. Mustard usually puts up tall thin stalks with few lives and nice yellow flowers.
aphids love collards around here in so cal so we keep the leaves picked. chard is a better bet for aphid free greens tho.
