When will I ever learn?
Three zucchini plants....way too much! The squashes are weird this year. My zucchini and spaghetti plants are going like gangbusters. My butternut plants...not so much. I may not even get a harvest. Tomatoes are looking fabulous. I'm doing some Heirloom purples, the cherries, early girls and of course a beefsteak. I'm also looking at a decent kiwi harvest since I cut back the vines.

Looks like I'll be spending a lot of time baking this fall. Green tomato cake and Green tomato mincemeat were a great hit last fall. Looks like I'll be doubling the zucchini bread making as well.

1. Don't I know it and commiserate!
This has been the first week of real heat, so the squash doubled from piddly to not so piddly. I can't grow zukes or radishes no matter what I do so I'm about to pull all the radishes. Tomatoes doubled in size plant wise and the early girl has blooms but the heirlooms - not so much. Beefsteak is looking a bit lame, but this heat'll catch up with them. They get plenty of sun. Dang rabbit "tipped" as in munch the tips of the snap peas even though I sprayed repellant. Regular peas are up in the container garden on the deck so they are doing fine. Just weird weather...........

2. allow me to revise some thoughts on zucchini
Around here 3 plants is barely enough and there are only two of us. Why? Because my husband is a culinary wizard and maintains that the best zucchini are the small, young ones. We never let a zucchini get more than 3/4- to an inch in diameter. They are wonderful that way--any larger than that, not so good.

Second, if you do let a few get away from you and grow to over an inch in diameter, you can make these wonderful pizza crusts with zucchini and freeze them:

I freeze them on cookie trays and take them off after they're frozen and stack them with waxed paper between them. All winter long we use them for quick, healthy pizzas.

3. Great idea on the Pizza crust. I'm certainly going to try that
I'm ruthless with the zucchini for the most part. We love to stuff and deep fry the blossoms so I abort at least half the harvest that way. I grab a few little ones every couple of days and grill them which is easy, simple and delish. Invariably there's always one or two that hide in plain sight and grow to the size of my arm before I see them. Those I use for breads.

4. That recipe looks great! Too bad my zucchini is refusing to make anything but male flowers!
SO frustrating. I'm about to make my own OP on the subject and see if anyone knows why this could be happening.
