Usually, I always miss some potatoes when I dig them in the fall. Those sprout fairly early in the spring and quite often make some of the best potatoes I get each year. I have become convinced that planting them very early is the key. The only danger is frost, but I've had some of these volunteers get zapped, and they grow right back.I I say go ahead and plant them, a little on the deep side (about 5-6 inches). The will be fine.
I'm going to try to get my potatoes planted in the next week or so. I've got a whole bunch of grocery store ones that I got really cheap because they were sprouting, plus some left from last year, plus I went and picked up red, Yukon gold, and russet seed potatoes at the feed store.
