Ever grown shallots?

Ever grown shallots?
Man am I mad at myself. Earlier this spring I put in shallots--high quality ones, too. They grew, then finally as the summer came on, died out entirely.

I was supposed to go dig them up then but I didn't do it. Now where are my shallots? Well, it appears they're growing again. I can find sprouting shallots but no shallots that could be dug up and used for cooking. When I dig up the sprout, it leads to a tiny little shallot bulb that is definitely not big enough to be eaten.

So when I didn't dig them up, what happened?

1. I grow shallots, but my climate is so different that I can't help you.
I'd let them grow and when the greenery dies back, I'd dig one or two to see if I have nice big bulbs.

Shallots and garlic are easy to grow in Northern Cal. I'm afraid I can't help.
