Beans!
Suddenly I am up to my *** in green beans.

I swear, the little ones actually turn into big beans as I'm picking. Tonight it was just plain beans as a side dish alongside the mac & cheese & stewed tomatoes, seasoned with a bit of fresh garlic and a dab of olive oil. Melt in your mouth good.

Tomorrow if we have enough ripe tomatoes, it will be green bean curry, heated up with a couple of fresh jalapeno peppers.

1. Don't ya just love it? Green beans right from the garden...they
don't taste anything like the ones you get at the store. I sometimes just go out, plant my butt and eat them right off the bush, but warm with butter and a little salt...heaven! And you can plant some more if you want.

We just and canned our first batch yesterday.

5. Yes,
You need a Pressure Cooker/Canner.

We purchased a Presto 16 quart Pressure Canner and Cooker.

Starkraven is the authority on canning in our home, and she would have to answer any specific questions. Canning (according to her) is not that difficult, but you have to know what you are doing.

7. Our old Sears Pressure Canner came with complete instructions for crops
You look up what you're canning and it gives the pressure and time. We bought it about 30 years ago and still use the book religiously. The only thing we have ever water packed was tomatoes. The traditional varieties of tomato are acidic enough that you don't need pressure to kill the nasties.
