I've recently been on a try-to-get-into-oddball-places kick in Halo 2. So far (single player only):
Cairo station: Inside the engine nozzles of In Amber Clad docked at Cairo Station
Outskirts: Ride the first phantom off the map Jump off the tail of the phantom to the tallest building overlooking the courtyard Various interesting rooftops (grenade jumping can get you to some interesting places)
Metropolis: Top of the support beam in the amphitheater (easy, but nice view). Ride the pelican that flies in just before the Scarab shows up the last time. Jump out of that pelican to the top of the tall building it flies over, and from there jump/slide down to the catwalks where you would ordinarily fight the Scarab, but the doors are locked and no one spawns.
Delta Halo/Regret: Top of the mountains. Bottom of the lake.
Sacred Icon: Bottom of the spooky side shaft that looks like the one in Halo 1, Silent Cartographer (the one with the horseshoe-shaped ledges at regular intervals).
Quarantine Zone: Escape the first and second maps in this level. (Mountains, top of the burning building, up the invisible wall in a ghost until you hit the ceiling of the level..). Ride the back of the super-sentinel that appears in the spiral area right after the big indoor fight (jump from the glass wall on the right), and when you're done riding, take it down with the sword.
Great Journey: Get into the final structure (with the blasted door) without using a vehicle, by climbing the structure and sliding/jumping down to the platform. Peak of the highest mountain on the structure side of the water (using a Ghost). Banshee in the final battle with Tartarus (shoot the wings off and it will fit). Ghost in the final battle with Tartarus (same route as if you are on foot; bring the ghost from the beginning of the level).
You can really get into some Twilight Zone moments with a little grenade jumping and creative use of Ghosts...
