I've played EUIII up to the "In Nomine" expansion pack. It's an interesting game and an intense good time in lots of ways. I have one major complaint. They've got their historical accuracy down pat, and I've learned a lot about the period from following up on "what is this?" questions about the map via wikipedia. For instance, I never knew there was a special flag for the Union of Kalmar until I managed to form a Scandinavian state by conquering Sweden and Norway while playing as Denmark. The map is dead-on accurate in every respect whenever you start a game.
From then on, however, it goes haywire. For instance, if you're playing France it might seem pretty easy to conquer Genoa, which basically only has one province at most points during the game. But because there are NO settings to make the rest of the map unfold according to history, you may win a war only to find out that the Genoese have colonized extensive stretches of Africa and therefore have lots of unconquered territory you have to invade in order to win the war. I have seen Quebec become an independent country as early as the 1600's, forming a Catholic theocracy after breaking away from Portuguese rule. The whole thing is kind of nutty. Then you have to deal with the fact that depending on when you start, the Austrians, French and Ottomans are extremely powerful, so if you are trying to play as Poland, or Brabant, one or the other will eventually fuck up your day at some point and there isn't a damn thing you can do about it, even if it's way past the point when the Ottomans were going into decline.
So while the game is never boring and cool in lots of ways, if you're looking for a way to play an historically accurate game (except for whatever outcomes result from your actions), it's never going to happen.
