1. I try not to use the word at all
So as not to encourage their fantasies. I use "criminy" instead. Dictionary.com reads:

Main Entry: criminy
Function: interjection
Definition: an exclamation of surprise, a mild oath; also written crimine, cf. crikey
Etymology: Italian crimine `crime'; euphemism for `Christ'

Feel for ya, though. I wouldn't pay any attention to your co-worker's request/demand. It's ridiculous. Christ is a common word and used often in everyday language.
