Elk Hunting.....What do they taste like?

So my husband has won a "lottery" for an elk tag in New Mexico. He says he's going to fill the freezer with elk meat this winter. Hmmmm.......is this a good thing? What does elk taste like? I have tasted buffalo and love it. I had venison a few times, some good, some tough and chewy. But elk? :shrug: I am hoping it's good because we don't eat factory-farmed meat in this household and the other kind is pretty pricey. If he's going to pay all that $$$ for the tag, I am sure hoping the meat will be tasty. (Of course, assuming he even gets one but don't tell him I said that! ;))

Just kidding, the liver is the best part in my opinion. Elk is a personal taste, you either like it or hate it, if you like buffalo and venison there is a good chance you will like elk. Even if you don't like the taste of elk you can turn it to sausage which tends to hide the game taste, but it does not last as long.

Liver is one of the few foods that I despise. I'm doubting elk liver is going to be any different.

Sausage is a great idea. I love sausage.

3. The Elk I've Had Has Been Quite Good

It was less gamey than venison; very much like beef, but with a slightly coarser texture. I'm betting that you'll like it quite well. Bon appetit.....

I don't mind a wee bit of "gamey" taste. Factory farmed meat these days has lost so much of its flavor, it's good to taste something authentic. Thanks.

9. A muzzle loader

He was showing it to me last night, so I can actually tell you something about it. It's a replica of a Hawkins that his father (now deceased) made with care. His father was a very skilled craftsman, and it's a beautiful gun. He says it's very accurate and he's bagged more deer with it than any of his other rifles.

When you go, which unit do you hunt? Do you use primitive weapons?

11. I hunt every where.

Arizona, New Mexico, Colorado, even have a hunt lined up for Canada this year. I'm an archery fan, shoot both re-curves and compounds. My Canada hunt will be for Caribou with a bow. I'm taking both my re-curve and the compound.

Archery sounds like more fun to me than guns. Last time we went camping, we helped the kids replicate a bow and arrow we saw the guy on Man vs. Wild make from tree limbs. :) It actually worked somewhat and we all had fun shooting at targets. One of the girls was getting really good. I think it sparked a real interest in her. She wants to try archery now.

7. I Saw A Whole Field Full Of Elk This Evening

Driving south out of Denver on I-25, I looked over and saw somewhere between 20 and 30 elk, all casually lying down together in a mowed field. They were a little way off, but the sun caught the glint of several pairs of antlers.

Beautiful animals. We moved up here from Texas a few months ago, so seeing wildlife like this is still a real treat....

I've never seen an elk in real life before. They don't have them here in southern California but when we go north I'm always keeping my eyes out for them. I never have seen one, though.

Colorado has so much natural beauty! How lucky you are. I did see my first prairie dog just outside of Denver. :)

Years ago i was working on wells at the Elk Hills Naval Reserve. They have a large heard of Tule Elk, native only to that region.

13. I wanted to stop last time we passed

not long ago, but we were on the last day of a long trip and everyone was too tired. Next time, we'll stop. If we do, what are the chances that we'll actually get to see the elk?
