Not sure where to post this - need a photoshop guru for Christmas gift

I have a letter from the woman who rescued the pup we adopted and I want to put the written text on an 8x10 photo of my husband with the pup. I'm wondering if anyone here could create an invisible gif for me so I can capture just the text from a scan of the letter. (I used to know how to do this but can't seem to get it right and am running out of time.)

Is there anyone here who could/would be willing to do such? I have little to offer you in return but gratitude.

The letter my husband wrote this woman (she's a nun) for Christmas made me cry - he's been so smitten by this little pup and her plight that this will make a very special gift for him. I hope someone here can help me make it happen. Thanks.
