37. I sure hope my bread comes out. It's my first all-handmade loaf.

I've made quick breads from mixes and probably even bread-machine bread at some point (in someone else's machine--I don't have one). But not hand-kneaded (not even a dough hook) bread before. I won't be able to bake it until tomorrow because the second proof needs to be in the fridge overnight.

I just hope I do this right. I'm more used to proofing text than dough.

The good sign? My starter had biiiiig loooong strands of gluten in it. The kind that might send Keith running in terror in the opposite direction. This leads me to hope that I am laying a foundation for good structure. IF I kneaded it correctly.

What can I say? The weather gets cold, I have a big kitchen now that I can actually cook in, and all of a sudden I get domestic.
