Wheel recommendations for an old bike ..

Wheel recommendations for an old bike ..
I have an old bike with a couple of sets of wheels. One of the sets has 700mm rims for "sew-up, glue-on" tires. I'm just not "into" fussing with those tires anymore (and getting too old to worry about speed).

I'm thinking about cutting the spokes and replacing spokes and getting some "clincher" rims. Any recommendations on brands/type of rim, spoke, tire? All my riding is on pavement (unless I lose concentration and go into the weeds).

Or would it make more sense to get complete new wheels and forget about lacing spokes?

Any good online source for these parts?

The bike is currently sitting on some 27x1.25 tires on the "backup" wheels. And it was nice to get out for a ride during a recent "warm snap".

1. I would go with already made rims, not worth the trouble to do it yourself
The last wheels I picked up were 26 inch wheels with a front generator (Generator and front rim all the same thing). I bought it about 5 years ago and never had any trouble with them. I ordered the wheels from Peter White Wheels.

2. I forgot, Peter White goes into details about wheel building and wheel components.

He uses Brass nipples and Wheelsmith's spokes. He uses to use DT (For the above article for details). Peter White goes into details on how he makes wheels. As to Aluminum nipples, Peter White Writes:

"If you want aluminum nipples, I will now build with them. However, my lifetime warranty does not apply to nipple failure of any sort. If your aluminum nipples crack or round off after you've been using the wheel and they need truing, the cost of replacing them will not be under warranty. I only warranty brass nipples!"

Peter White also has 27 inch rims (i.e. NOT 700cc but "true" 27 inch rims for older bikes).
