I bought a low end (but very nice to ride) mountain bike for commuting around the first of this month. It has worked out great - 310 miles on the bike, 15 miles on the car since - and I have really enjoyed biking instead of driving. Upgrades have been limited to a bar, stem and grips to fit me better, and "city" tires.
For commuting it is great, but for weekend trips its low price shows...lots of things could be better, and I finally decided it would be cheaper just to get a good road bike rather than upgrade this one for longer faster rides (and then it wouldn't be such a good commuter anyway). As I don't have the money for a good road bike, I just bought a very nice road frame w/carbon fork, and some little odds and ends. I have another old 10 speed that someone gave me a year ago, but it was too small to ride, and I think I can transfer enough parts to have a new road bike going soon. So I will have two bikes, a good sized box of spare parts, and probably a whole new list of things to upgrade.
Then there are the kid's bikes...as I have been riding every day, they have been riding more too. My youngest needed a bike with gears so we found on at a garage sale, and since she rides with her friends we went ahead and got a second garage sale bike too. Both of them need some parts, so there is another list and another box or two of spare parts...and we are keeping an eye out at garage sales for "parts bikes" for some things I'd rather not get new.
Bicycle proliferation is well under way. I just counted 5 bikes on the front porch, and 4 in back, and its still July...
