When do early and mail-in ballots get counted?

I suppose it may be different in each state, but I haven't heard much mention of them. Do they play a role in the media calling certain races before they are over?

1. I don't know, but I suspect more than one race may flip in a day

or so as more votes get counted.

2. Some are not counted for a very long time, unless they are needed

If there are not enough to swing the election to one side or the other, there is no rush
