Pretty much buy the Blu-Ray version if a movie is available in Extended Version.
For example, "Kingdom of Heaven" in Blu-Ray is the extended version and is awesome. An extra 40 minutes really adds missing storylines, as well as battle scenes, and transforms the movie from good to near masterpiece.
Pretty much any movie made in the last 10 years will look extremely good on Blu-Ray. You will notice the difference from DVD. However, movies from 1995 and earlier will usually be just as good on DVD, since the source material is somewhat degraded and won't take full advantage of the higher bitrate like newer movies could.
In other words, why spend $15 for the Blu-Ray of "Die Hard" if you already have the DVD, or if the DVD is available for $8? There will be little difference.
I'm waiting for the complete LOTR trilogy, extended editions, next year in Blu-Ray.
