Instead of ragging on individual school personnel, he needs to address the people who create the mandatory guidelines for menu items and meal composition. The school folks did not come up with the "French fries are a vegetable" standard: some bureaucrat far removed from the school decided that. The schools risk losing funds if they don't comply with the mandated standards. It doesn't make for good drama to address the USDA, which provides the schools with bulk commodities.
Can't argue with his focus on home-cooked meals, though. I grew up in the area and frying was the cooking method of choice for many people before McDonald's and Burger King had even established their presence.
