Dinner at the Prophets - New Years Eve edition (pix)

Blackeyed peas, collared greens and cornbread, pork filets with sauerkraut and kielbasa, and mashed potatoes.

Blackeyed peas
1 lb blackeyed peas
1 ham hock
1/2 lb cubed ham
1 onion, chopped
1 stalk celery, chopped
1/2 green pepper, chopped
1 tsp salt
1 tsp pepper
1 tsp cumin
1/2 tsp paprika

Sort and rinse peas, soak in4 cups water/1 cup peas for several hours or overnight. Place in crock pot with other ingredients. Cook on low 8 hours or until beans are tender.

Collared greens
1 bunch (about 3 lbs) collared greens
1/2 lb cubed ham
Salt, pepper, vinegar to taste
examine greens for quality, remove those with rust or brown spots on leaves. Chop stems off leaves. Chop greens into small (3"x3") pieces, place in saucepan with ham and add enough water to almost cover. Cover pan and bring to a boil. Add salt, pepper, and vinegar to taste.

Cornbread
I cheated and used a mix called Miracle Maize. Came out DAMN GOOD TOO!

Pork filets with sauerkraut and kielbasa
Brown pork filets in a roaster with salt, pepper, and garlic at 350° for 20 minutes, each side, with 1/4 cup water in pan. Slice 2 onions and lay on top of filets, add slices from one peeled apple on top. Cover with 2 bags of well rinsed sauerkraut. Add 3 tbsp brown sugar and salt and pepper, pour 2 cups water over top. Cook at 350° for 1 hour, add kielbasa and return to cooking for 1 1/2 hours. Serve over mashed potatoes.

5. Nice photos, but what happened to the mess o' greens?
I'm always amazed at how much greens shrink in the boiling process. Collards do hold up better than some others like spinach.

Now I need to get some sauerkraut and make pork with kraut too. Your photo was THAT good.

21. Can you FedEx me some of those Greens? I get so homesick
for them and I can't get them up here in Edmonton. Last time I bought turnip greens here they were horrid.

Of course! The good thing about silverware is that you don't really have to clean it. Silver's a famous anti-bacterial.

We had Fondue Bourguignon and I think I ate too much. I had a tummy ache the whole day, others were just lucky and had happy hang-overs. :(

that looks really good!

We're having chicken marinated with curry and mustard, and pilaf.

Those pix almost make me wish I ate pork!

The pork was the Prophetess' traditional New Years meal. I'd never had it before. It was EXCELLENT!
