12. but the idea of "resurrection" is a very ancient cultural one- fits with the idea

of nature's rebirth in springtime. It's too bad that it's been co-opted in the way that it has. It's very symbolic when you think about it.




As for food, I don't eat ham, so i don't know what we are having yet. My family used to always go out for dinner on Easter.

We're having spiral sliced ham, green beans with bacon and feta, scalloped potatoes, mashed potatoes for the less adventurous Midlets, and key lime pie.

Shrimp and a cheese platter to start.

W/ red potatoes, asparagus, and nice French red wine.

Very dark chocolate and Vintage Port for dessert... cigars and cognac are also available.

8. Something simple - chicken jambalaya

because Mr. t-t loves it, and it's just the two of us this year. The times I cooked elaborate Easter / Christmas dinners for a dozen people are over, but in so many ways I miss them. I loved watching my family enjoy the meals I planned and prepared.

Perhaps a bowl of caramel ice cream with chocolate sauce, some wafers and whipped cream a little later? Espresso with some Vecchia Romagna...? This is beginning to sound good. I may have to make another trip to the grocery store!

salmon
rice
asparagus with hollandaise sauce (from a mix)
corn (for the daughter's boyfriend who doesn't eat any other vegetables)
a tossed salad
dinner rolls
Sunshine Cake

Sunshine Cake recipe:
1 box yellow cake mix
11 0z can mandarin orange slices
4 eggs
1/2 cup vegetable oil.

Preheat over to 350.
Grease and lightly flour two 8-inch cake pans, or one bundt cake pan.
Beat eggs, add oil, then cake mix. Add mandarin oranges with the liquid.
Beat with mixer on medium speed for 2 minutes.

Bake at 350 for 25 to 30 minutes (longer for bundt cake)
When done, allow to cool completely.

Frosting:
20 oz can crushed pineapple (DRAINED)
8 oz Cool Whip
3.5 oz box of instant vanilla pudding

Mix everything with mixer for 2 minutes on low speed.
Frost the cooled cake and refrigerate at least 2 hours or overnight.

When my kids were little, I put an upside down paper cup inside the bundt cake, frosted over it and topped it with shredded coconut tinted green with food coloring. Then I added jelly beans and maybe some Peeps or small chocolate bunnies. Now my teeth ache just thinking about it.

10. we're having rack of lamb for dinner, ham throughout the day with german potato salad

maybe some cole slaw, etc. The lamb rack will be served like lollipops with a currant sauce, and roasted potatoes.

15. Ham & sweet 'taters and MUSTARD MOLD!!

Sweet potatoes just GO with ham.
Roasted asparagus, Mustard Mold*, green salad, deviled eggs, and strawberry shortcake.

*Miz t.'s Mustard Mold

4 EGGS
1/1/2 TPS DRY MUSTARD
¼ CUP WATER
1 ENVELOPE KNOX GELATIN
¾ CUP SUGAR
¼ TSP SALT
½ CUP CIDER VINEGAR
½ PINT WHIPPING CREAM


Mix the sugar with the gelatin that has been soaked in the ¼ cup of water, add the mustard and salt & ½ cup cider vinegar.

Beat eggs in the double boiler then add the mustard mixture. Cook over double boiler until the custard coats the back of a spoon. Cool

Whip cream then fold in the cooled mustard mixture.

Chill until set.

17. I do the holiday cooking at my house.

I've gotten quite good at turkey and ham. Without boasting, I now make both better than my mother did.

My mother was an amazing cook, and I took care starting in my teens to learn her recipes. I've improved on a few but not others; I still make green bean casserole her way. With canned french-cut green beans, and Campbells' cream of mushroom soup.

Anyway, tomorrow's menu involves for breakfast fresh polish sausage and hard boiled eggs for breakfast. I'm also toying with making a loaf of Pillsbury Italian bread. This is actually much better than it sounds; if one bakes anything from Pillsbury it has that "Pillsbury quality" to it; you can always taste that it's Pillsbury! But this italian bread they have, I brush it with melted butter and bedizen the exterior with oregano and basil, and the result is fresh-baked crusty herb bread, and it tastes REALLY good - for only a buck and a quarter! One can do the same thing with the Pillsbury breadsticks, except in that case I add a little parmesan to the sticks. I haven't finalized the breakfast plans, though; heaven knows we'll be eating enough food tomorrow so I may skip the bread.

For lunch/dinner (since the meal will probably fall between traditional lunchtime and dinnertime), we're going to my mother-in-law's for "corned beef and beef tenderloin" (so the wife tells me). She's an immigrant, Hungarian-American, and she was for many years married to an Austrian-American. Needless to say, her cooking is very European in style; I expect that beef tenderloin will be cooked in beer and something will be served with dill sauce. Spaetzel is a given. No ham this year; not a big deal since I bought one to make at home (probably next week).
